Wow, autumn has definitely arrived and all I want to do is make big pots of soup.
This month I’m attempting to refrain from spending money. Coupled with the fact I need to defrost my freezer after it iced up, this week’s dinners are courtesy of the freezer/cupboards.
I’m not sure how well we will stick to the plan at the weekend as its our 11th wedding anniversary and my parents are also planning to visit at some point. I’m hoping me and hubby can get out for a quick meal, but will be dependant on there being staff to cover hubby’s shift for a couple of hours and tied in with parents visit for babysitters.
Monday – Chicken tikka masala (courtesy of freezer batch cook) for adults, chicken goujons and waffles for M
Tuesday – Pizza (shop bought that didn’t get eaten at the weekend)
Wednesday – Pasta in Pesto sauce with sausages
Thursday – Mince & Tatties (again, courtesy of freezer)
Friday – (our anniversary) – Chicken Fajitas / Enchiladas
Saturday – Homemade pizza
Sunday – Roast Beef and trimmings
I’ve worked out that the only items I will need to purchase to finish off the above meals are:
- Jar of pizza topping sauce (usually I batch cook, but doubt I will get round to it)
- Onions & Peppers for fajitas
- Yorkshire puddings, potatoes and veg for Sunday roast
As I’m going away next week with the boys and my sister and nephew, we have already started discussing meals, so I will need to get organised and write a shopping list and book a Tesco delivery slot to ensure I get everything in time.
